Sail across the seas of flavour this November with a gastronomic journey that bridges oceans and cultures at SJM Resorts’ “Chefs’ Table: A Symphony of Senses”. This star-studded collaboration features Forbes Travel Guide Five-star restaurant Mesa by José Avillez, Macau’s gem of contemporary Portuguese cuisine, and one MICHELIN Star Chim by Chef Noom, Kuala Lumpur’s pioneering Thai fine dining destination. Chef Avillez and Chef Noom are both masters at paying reverent homage to the culture and stories of their respective culinary heritages using modern techniques. Together, they will present a sophisticated menu of dishes that fuse Portuguese and Thai culinary traditions, inspired by the historic maritime voyages of Portuguese explorers in the 15th century. Blending the bold, aromatic flavours of Thailand with the rich, soulful traditions of Portugal, their collaboration will unveil a delectable story of exploration, trade and cultural exchange.

Chef José Avillez

Internationally renowned as Portugal’s first chef to earn two Michelin Stars at his restaurant in Lisbon, award-winning Portuguese chef José Avillez is passionate about promoting his country’s gastronomy to the world. Through his collaboration with Mesa, Chef Avillez aims to be a source of inspiration for creating an exceptional contemporary Portuguese culinary journey in Macau.

Chef Noom (Thaninthorn Chantrawan)

Driven by his passion for the depth and elegance of Thai cuisine, Chef Noom has honed his craft at some of the world’s most renowned restaurants, refining his techniques and artistry for more than 14 years. In 2024, he established Chim by Chef Noom in Kuala Lumpur, dedicated to going beyond ordinary Thai offerings, and led the restaurant to its first MICHELIN Star within a year of its opening.
